Earlier this year I had the pleasure of meeting Portia Tresselt at a Vipassana, a ten day silent Buddhist meditation retreat. At our first exchange I was captivated by her warmth and earthiness. She made me feel safe, accepted and nurtured. As the conversation evolved I discovered Portia is a holistic HEALTH nutritionist. I felt compelled to share her vision with you.
What do you do?
I am a Holistic Nutritionist working through a whole foods approach to personalise nutrition. I hope to encourage people to add more fresh, living ingredients into their diet. For 20+ years I have offered private consultations, held monthly lectures and quarterly workshops to help people understand that eating well is about getting back to the basics. I have also created a healthy line of products to show people that you don’t have to be a nutritionist to eat well. So whether you are on a dairy free, gluten free, egg free or sugar free diet, you can eat well.
I am now in the process of sharing my knowledge in my recipe books, online video tutorials & workshops and a creating a brand new podcast in hopes that I will reach a wider community.
Why do you do it and what are the benefits to you, your community and environment?
Nutrition and food has been a passion for me even before I knew much about it. I am at my happiest when I am learning. When I learn, I LOVE to share – no secrets with me – passing my knowledge and experience onto my friends, clients, and wider community.
My focus has been to encourage people to find what works for them. Adapt a diet that suits your lifestyle that makes you happy. This may mean trying different diets over time, but overall, consuming less meat and incorporating more plant based nutrition which is absolutely critical for a healthy body and our environment.
What does health mean to you?
Health for me is being happy. This includes eating a clean, wholesome diet that puts little impact on our planet.
I believe that everything we take in is our nutrition. This includes not only food to mouth, but what we put on our skin, what we listen to, what we watch, the words we speak, the level of stress we succumb to and what we allow to come in, all affects our health – our happiness.
What inspires you?
Reading about the latest in nutrition and engaging with people both in my industry as well as in everyday life making changes that help them feel better. I am blessed to see inspiration in people and this inspires me.
Name one change you would like to be and see in this world?
Concerning diet, I would like to see humans consuming LESS animal products.
In my lifestyle, I would like to think, act and speak entirely from my loving self.
If you could pass on just one valuable lesson to others, what would that be?
Make healthy changes one step at a time, making that connection between proper nutrition and helping your body’s innate ability to heal and stay well. Spend more time with friends & family around the table.
This is definitely one of the all time favourites, easy to make and very healthy for all!
Pumpkin Parsley Pate
I was trying to make a green dip full of dense nutrition. Now it is by far the favorite.
2 C raw pumpkin seed
1 bunch parsley – apx 1 cup chopped
1 Tbsp each garlic and minced ginger
¼ cup raw soy sauce or wheat free tamari
1/4 cup olive oil – optional for a creamier spread
½ cup fresh squeezed lemon juice
In a container filled with water, soak the pumpkin seeds for 1 hour. Drain the seeds and put them in a food processor or blender with the parsley, garlic, ginger, soy sauce or salt, olive oil and lemon juice. Blend until creamy. Serve as a dip, block of cheese or use as a spread in sandwiches and wraps. I press the pate into a bowl, flip it over onto a plate, then sprinkle more pumpkin seeds over the top and garnish with parsley.
This reminds me of growing up in Japan with its Asian flavour.
It is full of zinc, protein, chlorophyll, and healthy fats that everyone in the family seems to enjoy.
